  • 1 kg / 2 lb Baking Potatoes (peeled & diced)
  • 1 liter / 4 cups Chicken Stock
  • Juice of 2 Lemons (plus more for serving)
  • 3 tbsp Olive Oil (divided)
  • 2 tsp Dried Oregano
  • 200g / 7oz Feta Cheese
  • 100g / 3.5oz Cream Cheese
  • Fresh Parsley (for garnish)

Instructions

  1. Boil the diced potatoes in chicken stock with lemon juice until knife-tender.
  2. Drain and let steam dry for about 10 minutes; preheat oven to 390F/200C.
  3. Toss dried potatoes with olive oil, oregano, salt, pepper, and garlic on a baking tray.
  4. Roast for 40-45 minutes until golden brown and crispy, tossing occasionally.
  5. While roasting, blend feta cheese, cream cheese, olive oil, and honey until smooth.
  6. Serve the whipped feta on a plate topped with roasted potatoes; garnish with parsley and extra lemon juice if desired.
