Ingredients

  • All-purpose flour
  • Active dry yeast
  • Warm water
  • Olive oil
  • Salt
  • Fresh spinach
  • Ricotta cheese
  • Mozzarella cheese
  • Feta cheese
  • Roasted garlic

Instructions

  1. In a mixing bowl, combine warm water and active dry yeast; let sit until frothy (5–10 minutes).
  2. Mix in olive oil and salt, then gradually add all-purpose flour until dough forms.
  3. Knead on a floured surface for 5–7 minutes until smooth, then let rise in an oiled bowl covered for about 1 hour.
  4. Preheat oven to 400°F (200°C). Roast garlic by slicing off the top, drizzling with olive oil, wrapping in foil, and baking for 30–35 minutes.
  5. Once garlic cools, mix ricotta, mozzarella, feta, and squeezed roasted garlic in a bowl.
  6. Preheat oven to 475°F (245°C). Roll out the risen dough into desired shape and transfer to a baking sheet.
  7. Spread the cheese mixture over the crust and top with fresh spinach.
  8. Bake for 12–15 minutes until golden brown; allow to cool slightly before slicing.
