  • 1 large onion
  • 6 garlic cloves
  • 2 tbsp oregano (dried)
  • 1 tbsp thyme (dried)
  • 1 tsp rosemary (dried, crushed)
  • 2 tsp marjoram (dried)
  • 2 tsp cumin
  • 3 tsp salt
  • 2 tsp black pepper
  • Oil (for cooking)
  • Pita bread
  • Lettuce (sliced)
  • Tzatziki sauce
  • Tomatoes (sliced)
  • Red onions (sliced)
  • Feta cheese (optional)
  • French fries (optional)

Instructions

  1. Puree onion and garlic in a food processor until smooth.
  2. In a stand mixer, combine ground meats with pureed onion-garlic mix and spices; blend until a paste-like consistency is achieved.
  3. Optionally refrigerate the mixture for enhanced flavor (2 hours to 24 hours).
  4. Preheat oven to 325°F; shape the meat into a log on a baking tray lined with foil.
  5. Wrap tightly in tin foil and bake for about 1.5 hours, flipping halfway through.
  6. Let rest for 5 minutes before slicing thinly.
  7. Sauté sliced gyro meat in oil for added crispiness.
  8. Assemble warm pita with tzatziki, veggies, gyro meat, and feta cheese.
