  • 1 cup self-raising flour (or all-purpose flour)
  • 1 teaspoon baking powder (if using all-purpose flour)
  • 2½ cups fresh spinach
  • 100g feta cheese
  • Olive oil for frying
  • Salt and black pepper to taste

Instructions

  1. Prepare the dough by mixing flour, salt, and yogurt in a large bowl. If using all-purpose flour, add baking powder.
  2. Knead the dough on a floured surface for 3–5 minutes until smooth, then let it rest for 10 minutes.
  3. For the filling, chop spinach and mix with crumbled feta, salt, and pepper in a bowl.
  4. Divide the rested dough into two pieces; roll each into thin circles.
  5. Spread half the filling over one circle, fold it over to seal, and cook in a heated pan with olive oil until golden brown on both sides.
