  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons gochujang
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together gochujang, miso paste, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, garlic, and ginger until well combined.
  2. Place chicken thighs in a zip-top bag or bowl. Pour the marinade over the chicken and ensure they are well coated. Seal or cover and refrigerate for at least 30 minutes or overnight.
  3. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  4. Remove the chicken from the marinade and place it skin-side up in the prepared dish. Discard any leftover marinade.
  5. Season with salt and pepper. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
