Ingredients

  • 2 cups arugula or mixed greens
  • 1 cup cooked chickpeas
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt & pepper to taste
  • 1 tsp olive oil
  • 1 avocado, diced
  • 56 cherry tomatoes, halved
  • 1 cup shredded carrots
  • 56 green olives (pitted)
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Pat dry the chickpeas and toss them with olive oil, smoked paprika, cumin, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until crispy.
  2. In a large bowl, layer your greens as the base. Arrange the roasted chickpeas, diced avocado, halved cherry tomatoes, shredded carrots, and green olives on top.
  3. Season with additional salt and pepper to taste. Garnish with fresh parsley and drizzle with olive oil if desired.
