  • 1/2 cup honey (or maple syrup)
  • 2 tablespoons molasses
  • 2-inch piece of fresh ginger (thinly sliced)
  • 2 cinnamon sticks
  • 1 teaspoon pure vanilla extract
  • Ice
  • 2 ounces lemon juice
  • 1 ounce brewed coffee (in place of coffee liqueur)
  • 1 ounce gingerbread syrup
  • 12 ounces heavy cream

Instructions

  1. To prepare the gingerbread syrup, combine water, honey (or maple syrup), molasses, sliced ginger, cinnamon sticks, and vanilla in a saucepan. Bring to a boil, then simmer for about 5 minutes. Cool and strain.
  2. In a cocktail shaker filled with ice, mix lemon juice, brewed coffee, gingerbread syrup, and heavy cream. Shake well until chilled.
  3. Rim your serving glass with a cinnamon-sugar mixture. Pour the cocktail over ice in the prepared glass and garnish with mini gingerbread cookies.
