  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup chicken broth
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon Cajun seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Cook the penne pasta according to package instructions until al dente; drain and set aside.
  2. Season the chicken pieces with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken until golden brown (6–8 minutes). Remove from skillet.
  3. In the same skillet, melt butter over medium heat; sauté minced garlic for 1–2 minutes until fragrant.
  4. Stir in heavy cream and chicken broth; bring to a gentle simmer.
  5. Gradually add mozzarella, cheddar, and Parmesan cheeses to the sauce while stirring until melted and smooth.
  6. Return cooked chicken to skillet; toss to coat thoroughly with sauce. Add cooked penne pasta; mix until fully coated.
