  • 1 lb boneless skinless chicken breasts or thighs
  • 12 oz bowtie pasta
  • 2 tbsp olive oil
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese
  • 1 cup Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Cajun seasoning, salt & pepper

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente (10-11 minutes). Drain and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun spice mix, salt, and pepper. Sear until golden (6-8 minutes), then keep warm.
  3. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and sauté until fragrant (30 seconds).
  4. Pour in heavy cream and milk; whisk in cream cheese until smooth. Stir in Velveeta until melted, followed by mozzarella and Parmesan.
  5. Toss cooked bowtie pasta in the Alfredo sauce until well coated. Adjust consistency with reserved pasta water if necessary.
  6. Serve chicken alongside cheesy pasta and garnish with parsley.
