  • 1 salmon fillet
  • 2 medium potatoes, peeled & diced
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tbsp butter (for salmon)
  • 1 tbsp olive oil
  • 1 garlic clove, smashed
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tbsp butter (for carrots)
  • 1 tsp honey or maple syrup
  • Pinch of chili flakes (optional)
  • Pinch of salt
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400F (200C). Toss diced potatoes with olive oil, garlic powder, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Heat a skillet over medium heat and melt butter. Add smashed garlic and season the salmon with paprika, salt, and pepper. Cook salmon skin-side down for about 4-5 minutes on each side until cooked through.
  3. Steam baby carrots for about 5 minutes until tender. In a small pan, melt additional butter and stir in honey (or maple syrup); toss steamed carrots in this glaze.
  4. Steam broccoli florets for approximately 3-4 minutes until bright green and tender-crisp.
  5. Plate the salmon alongside roasted potatoes, glazed carrots, and steamed broccoli. Serve hot.
