  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 2 cups baby spinach (or regular spinach, chopped)
  • 2 cups broccoli florets
  • 2 cups golden potatoes, halved and roasted/boiled until tender
  • 2 tbsp fresh parsley, chopped
