  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 2 cups rotini pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Velveeta (cubed)
  • 1 cup shredded mozzarella
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Cook the chicken pieces seasoned with Cajun seasoning, garlic powder, onion powder, paprika, salt, and pepper until golden brown (6-8 minutes). Add butter and minced garlic; stir and set aside.
  3. In the same pan, bring chicken broth to a simmer, add rotini pasta, cover and cook for 10-12 minutes until tender.
  4. Reduce heat to low; stir in heavy cream, Velveeta, and Parmesan until melted.
  5. Return the chicken to the pan and mix well with the sauce.
  6. Sprinkle mozzarella on top; cover for 2-3 minutes until melted.
  7. Garnish with chopped parsley before serving.
