Scale
  • 18 oz all-purpose flour

  • 2½ tsp fine sea salt
  • 1 Tbsp + ½ tsp instant yeast
  • ½ cup + 2 Tbsp cold water
  • ½ cup + 2 Tbsp cold whole milk
  • 3 Tbsp softened unsalted butter
  • 1¼ cups cold unsalted butter

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and yeast. Add cold water, milk, and softened butter; mix until smooth.
  2. Let the dough rise covered until nearly doubled in size (about 1½ to 2 hours). Chill shaped dough for at least an hour.
  3. Prepare the butter layer by flattening cold butter into a square and chilling until firm.
  4. Encapsulate the butter in the dough and roll out into rectangles, folding as instructed to create layers.
  5. Shape croissants from triangles cut from the rolled-out dough.
  6. Allow croissants to proof before baking at 425°F until golden brown.
