  • 2 cups instant rice (white or brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water (using the empty soup can for measurement)
  • 1 envelope onion soup mix
  • Optional: frozen mixed vegetables, shredded cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish.
  2. In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, water, and instant rice. Mix thoroughly.
  3. Pour the mixture into the greased baking dish and spread evenly.
  4. If desired, stir in frozen mixed vegetables and shredded cheese.
  5. Place raw chicken breasts on top of the rice mixture and sprinkle with onion soup mix.
  6. Cover tightly with aluminum foil and bake for 60 minutes without lifting the foil.
  7. Check for doneness—ensure the chicken reaches an internal temperature of 165°F (75°C) and the rice is tender.
  8. Optional: Broil uncovered for 3–5 minutes for a golden top.
  9. Allow to rest for 5–10 minutes before serving.
