  • 2 medium-sized oranges
  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios
  • 6 large eggs
  • 1 teaspoon baking powder
  • A pinch of salt

Instructions

  1. Thoroughly wash the oranges and boil them in water for about 30 minutes until soft. Let cool.
  2. Cut the cooled oranges in half, remove any seeds, and blend into a smooth puree.
  3. In a food processor, combine the orange puree with sugar, almond meal, ground pistachios, baking powder, and salt; blend until mixed.
  4. Whisk eggs in a large bowl until frothy, then fold in the orange-nut mixture until smooth.
  5. Preheat oven to 180°C (350°F) and prepare a 9-inch round cake pan with parchment paper.
  6. Pour the batter into the pan and bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool for about 10 minutes before transferring to a wire rack.
