- 2 medium-sized oranges
- 200 grams granulated sugar
- 200 grams almond meal
- 100 grams shelled pistachios
- 6 large eggs
- 1 teaspoon baking powder
- A pinch of salt
- Thoroughly wash the oranges and boil them in water for about 30 minutes until soft. Let cool.
- Cut the cooled oranges in half, remove any seeds, and blend into a smooth puree.
- In a food processor, combine the orange puree with sugar, almond meal, ground pistachios, baking powder, and salt; blend until mixed.
- Whisk eggs in a large bowl until frothy, then fold in the orange-nut mixture until smooth.
- Preheat oven to 180°C (350°F) and prepare a 9-inch round cake pan with parchment paper.
- Pour the batter into the pan and bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool for about 10 minutes before transferring to a wire rack.
