  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 14 oz can sweetened condensed milk
  • 12 oz can evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs
  • 1/4 tsp fine sea salt
  • Berries to serve (strawberries, raspberries, or blueberries)

Instructions

  1. Preheat your oven to 350°F with a rack in the middle. Bring a kettle of water to boil for the water bath later on. Prepare a non-stick cake pan.
  2. In a medium heavy saucepan, stir together sugar and water until dissolved. Bring to a boil over medium-high heat without stirring for about 3-5 minutes. Once it starts turning golden, swirl the pan frequently until it reaches cinnamon color, approximately 1-2 minutes. Remove from heat and swirl constantly for another 30 seconds until amber-colored.
  3. Immediately pour the melted sugar into your round cake pan. Quickly tilt the pan to spread the caramel over its bottom before it sets.
  4. In a blender, combine sweetened condensed milk, evaporated milk, heavy cream, vanilla extract, eggs, and salt. Blend on low speed for about 1 minute to avoid too much foam. Strain through a fine mesh sieve lined with cheesecloth if desired. Pour this mixture into your cake pan over the caramel layer.
  5. Cover your cake pan with foil carefully so it doesn't touch the top of the custard. Set this covered pan inside a larger roasting pan in your oven. Pour hot water from your kettle into the roasting pan halfway up the sides of your cake pan.
  6. Bake at 350°F for about 70-80 minutes. When finished baking, jolt the pan slightly; if there’s just a slight jiggle in the center, it's done!
  7. After baking, remove from oven and uncover it carefully. Allow cooling to room temperature before covering with plastic wrap and refrigerating for at least six hours or overnight.
  8. When ready to serve, run a knife around the edges of your cake pan while cleaning it periodically. Place a rimmed platter over it, invert gently onto the platter. If needed, tap on the cake pan until dislodged. Garnish with fresh berries if desired.
