  • 2 pounds salmon (cut into bite-sized chunks)
  • 1.5 pounds potatoes (non-starchy potatoes, peeled and quartered)
  • 3 large carrots (peeled and cut into rounds)
  • 4 medium leeks (white and light green parts only, cut into small rounds and cleaned)
  • 4 cups fish stock
  • 1 cup heavy whipping cream (8 ounces)
  • 1 cup fresh dill (chopped)
  • 4 tablespoons unsalted butter
  • 5 cups water
  • 1 tablespoon kosher salt (divided and to taste)
  • 1/4 teaspoon allspice
  • 1/2 teaspoon black pepper (to taste)

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced leeks and sauté until soft.
  3. Pour in 5 cups of water along with salmon skins, and season with salt, allspice, and black pepper. Bring to a gentle boil.
  4. Add quartered potatoes and sliced carrots; reduce heat and simmer for about 10 minutes until tender.
  5. Gently add bite-sized salmon chunks and pour in fish stock. Simmer for an additional 10 minutes until salmon is cooked through.
  6. Stir in heavy whipping cream and chopped dill just before serving, adjusting seasoning as needed.
