  • 8 oz penne pasta
  • ½ cup crumbled feta cheese
  • ½ cup dried cranberries
  • ¼ cup toasted walnuts, chopped
  • 2 cups baby spinach
  • ¼ cup thinly sliced red onion
  • ¼ cup fresh orange juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a small bowl, whisk together orange juice, olive oil, honey, Dijon mustard, salt, and black pepper until well combined.
  3. In a large mixing bowl, combine cooked pasta, feta cheese, cranberries, walnuts, spinach, and red onion.
