- 8 oz penne pasta
- ½ cup crumbled feta cheese
- ½ cup dried cranberries
- ¼ cup toasted walnuts, chopped
- 2 cups baby spinach
- ¼ cup thinly sliced red onion
- ¼ cup fresh orange juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Cook the penne pasta in salted boiling water until al dente. Drain and rinse under cold water.
- In a small bowl, whisk together orange juice, olive oil, honey, Dijon mustard, salt, and black pepper until well combined.
