  • 2 Tablespoons olive oil (divided)
  • 1 pound mild Italian sausage (substituted with turkey or beef)
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic (minced)
  • 1 24 ounce jar spaghetti or marinara sauce
  • 1 quart beef broth (or chicken broth)
  • 1 15 oz can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon basil
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon black pepper
  • Salt and freshly ground black pepper
  • 1 cup dry ditalini pasta
  • 1 15 oz can dark red kidney beans, drained and rinsed
  • 1 15 oz can great northern beans, drained and rinsed
  • Finely shredded Romano or Parmesan cheese

Instructions

  1. In a large stock pot over medium-high heat, warm 1 tablespoon of olive oil. Add the Italian sausage and brown until crumbled; drain excess fat.
  2. Add the remaining olive oil to the pot and sauté onion, carrot, and celery until softened (about 5–6 minutes). Stir in the garlic for an additional minute.
  3. Return the browned sausage to the pot and mix in spaghetti sauce, beef broth, diced tomatoes, and spices. Bring to a boil, then reduce heat to low and simmer for 15–20 minutes.
  4. Cook ditalini pasta according to package instructions until al dente; drain and add to soup along with rinsed beans. Cook for an additional few minutes.
  5. Serve hot, garnished with freshly grated cheese if desired.
