  • 1 cup chopped cucumber
  • 1 cup halved cherry or grape tomatoes
  • 1 cup crumbled feta cheese
  • 2.25 oz sliced black olives (drained)
  • 1/4 cup finely diced red onion
  • 1/2 to 1 cup Italian salad dressing

Instructions

  1. Cook the tricolor rotini pasta according to package instructions, adding salt to the water. Drain and cool under cold running water.
  2. In a large mixing bowl, combine the cooled pasta with chopped cucumber, tomatoes, feta cheese, olives, and red onion. Pour in Italian dressing and stir well; start with 1/2 cup dressing and adjust to taste.
