  • 1 teaspoon kosher salt
  • ½ teaspoon coarsely ground black pepper
  • 2 tablespoons gluten-free all-purpose flour
  • 2 tablespoons olive oil
  • ½ yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 1 large carrot (cut into 2-inch chunks)
  • 2 Yukon Gold potatoes (diced)
  • 2 cups beef broth
  • ¼ cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • Fresh thyme leaves (for garnish)

Instructions

  1. Preheat your oven to 325°F.
  2. Season beef chunks with salt, pepper, and dust with flour.
  3. Heat olive oil in a large Dutch oven over medium heat; brown the beef in batches for about 3–4 minutes.
  4. Remove browned beef and sauté onions, garlic, and carrots until lightly browned.
  5. Add potatoes, broth, tomato paste, Worcestershire sauce, bay leaf, and browned beef back into the pot.
  6. Bring to a simmer; cover and transfer to the oven.
  7. Cook for about 2–2.5 hours until the beef is tender. Remove bay leaf before serving.
