  • 13.5 fl oz full-fat coconut milk

Instructions

  1. In a medium pot, boil 5 cups of water over high heat. Add tapioca pearls and cook on medium heat for 10 minutes, stirring occasionally.
  2. Turn off heat, cover pot, and let soak for 10-15 minutes until translucent.
  3. Rinse cooked tapioca in cold water using a fine mesh sieve; transfer to a large bowl.
  4. Mix in room temperature coconut milk with the tapioca.
  5. Blend 17.6 oz strawberries with condensed milk until smooth; pour into the bowl and combine thoroughly.
  6. Dice remaining strawberries and fold into the mixture or use as topping.
  7. Divide into dessert bowls or glasses, garnish with mint if desired, and serve chilled.
