  • 1 box French vanilla cake mix
  • 1 large egg
  • 1/2 cup unsalted sweet cream butter (softened)
  • 3 cups Easter sprinkles
  • 1/2 cup unsalted sweet cream butter (for frosting, softened)
  • 2 1/2 cups powdered sugar
  • 2 tablespoons heavy whipping cream
  • Pink gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a standing mixer, combine the cake mix, egg, and butter until a soft dough forms.
  3. Mix in 1 cup of Easter sprinkles evenly into the dough.
  4. Scoop portions of dough, roll into balls, and coat each in more sprinkles.
  5. Bake on prepared sheets for 10-12 minutes; allow to cool completely on wire racks.
  6. For the frosting, beat softened butter, powdered sugar, whipping cream, and pink gel food coloring until creamy.
  7. Pipe frosting onto the bottom half of one cookie and sandwich it with another half.
