  • 8 oz macaroni pasta
  • 6 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, diced
  • 2 celery ribs, chopped
  • Fresh chives, for garnish
  • Paprika, to taste
  • Sea salt, to taste

Instructions

  1. Cook the macaroni according to package instructions for about 8-10 minutes. Drain and rinse under cold water; set aside in a large mixing bowl.
  2. Halve the hard-boiled eggs, remove yolks, and mash them in a separate bowl. Chop the egg whites into small pieces and add to the pasta.
  3. Mix the mashed yolks with Greek yogurt, mayonnaise, and Dijon mustard until smooth.
  4. Add diced red onion and chopped celery to the pasta bowl. Pour in the dressing made from egg yolks and stir until everything is well combined.
  5. Garnish with fresh chives and sprinkle paprika and sea salt to taste. Chill for at least one hour before serving for optimal flavor.
