  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut ginger in half; cube one half and shred the other.
  2. Simmer cubed ginger with water for 1 hour and 15 minutes; reserve ½ cup of liquid after draining.
  3. Chill the cooked ginger for at least 4 hours in the refrigerator.
  4. In the same pot, combine chilled ginger, reserved water, and sugar, then boil for one minute.
  5. Stir in liquid pectin and simmer gently for about 7 minutes while skimming off foam.
  6. Sterilize jars by boiling them before filling with marmalade.
  7. Fill each jar with marmalade, leaving a ¼ inch space at the top; remove air bubbles and clean rims before sealing.
  8. Process jars in a boiling water bath for 15 minutes.
  9. Cool jars completely on a towel or cooling rack, ensuring all seals are tight.
