  • 4 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 1 tsp Salt
  • 2 1/4 tsp Instant Yeast
  • 1 1/4 cups Cold Whole Milk
  • 1 cup Unsalted Butter (cold)
  • 16 pieces Chocolate Batons or Semi-Sweet Chocolate
  • Confectioners’ Sugar (for dusting)

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk while mixing until a soft dough forms. Knead on a floured surface until smooth.
  2. Roll out the dough into a rectangle about 1/2 inch thick. Pound cold butter flat between parchment sheets and place it on one half of the dough. Fold the other half over to encase it.
  3. Roll out the dough again into a rectangle and fold into thirds like a letter; repeat twice more, chilling between folds if necessary.
  4. Roll out the final dough to about 1/4 inch thick and cut triangles. Place chocolate batons at the base and roll tightly towards the tip.
  5. Place on a lined baking sheet, brush tops with milk, and let rise in a warm place until doubled in size.
  6. Preheat oven to 400°F (200°C) and bake for about 20 minutes or until golden brown. Dust with confectioners’ sugar before serving.
