  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (28 ounces) crushed fire-roasted tomatoes
  • 1 can (8 ounces) tomato paste
  • 1 can (4 ounces) diced green chilies
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • salt
  • 23 cups chicken or beef broth
  • 6 ounces cream cheese, at room temperature
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • avocado, for serving
  • Greek yogurt, for serving

Instructions

  1. Prepare your ingredients by chopping the onions and poblano peppers, and measuring out the spices.
  2. In a skillet over medium heat, brown the ground beef. Drain excess fat if necessary.
  3. In the slow cooker, combine browned meat with onions, poblano peppers, spices, tomatoes, hot sauce, butter, bay leaves, salt, and broth. Stir to mix well.
  4. Cover and cook on low for about 120 minutes to meld flavors.
  5. Stir in cream cheese until melted, followed by shredded cheddar cheese until fully incorporated.
  6. Before serving, mix in chili beans and remove bay leaves. Top each bowl with cilantro, green onions, avocado slices, or Greek yogurt as desired.
