  • 1 pound ground turkey or chicken
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced (russet or Yukon gold)
  • 4 cups chicken broth
  • 1 cup heavy cream or plant-based cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground turkey, cooking until browned. Drain excess grease.
  2. Sauté diced onion in the skillet for 3–4 minutes until softened, then add minced garlic for another 30 seconds.
  3. Combine browned turkey, sautéed onion and garlic, diced potatoes, chicken broth, salt, pepper, and thyme in the crockpot.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are fork-tender.
  5. Stir in heavy cream; cover again and let warm for 15–20 minutes.
  6. Serve hot, garnished with fresh herbs if desired.
