  • 2 cups chicken broth
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 1 (15 oz) can cannellini beans (drained)
  • 1 (15 oz) can great northern beans (drained)
  • 8 oz softened cream cheese
  • 1 (4 oz) can diced green chiles
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp lime juice
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder

Instructions

  1. Prepare your ingredients: chop onions, mince garlic, and drain beans.
  2. In your slow cooker, combine chicken broth, onions, garlic, green chiles, both types of beans, cilantro, lime juice, cumin, oregano, salt, black pepper, and chili powder. Stir until well combined.
  3. Place the chicken on top of the mixture and ensure it's covered with the sauce.
  4. Cover and cook on low heat for 7 hours or high heat for 4 hours until chicken is fully cooked.
  5. Remove chicken from the pot and shred it using two forks before returning it to the chili mixture. Stir well and serve warm.
