  • 45 medium russet or Yukon gold potatoes, thinly sliced
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese (divided)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions

  1. In a skillet over medium heat, brown ground beef and chopped onion until fully cooked; drain excess fat.
  2. Wash and thinly slice potatoes to about 1/8 inch thick for even cooking.
  3. Layer half of the potatoes in the crockpot followed by half of the beef mixture and a portion of cheddar cheese. Repeat these layers with remaining ingredients.
  4. In a bowl, combine cream of mushroom soup, milk, garlic powder, salt, and pepper; pour over the layered ingredients in the crockpot.
  5. Cover and cook on low for 6 to 8 hours until potatoes are tender.
  6. Add remaining cheese during the last 15 minutes of cooking; garnish with fresh herbs before serving.
