  • 1 pound ribeye steak or sirloin, thinly sliced (or ground beef)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded provolone cheese
  • 1 tablespoon olive oil
  • 1 cup beef broth

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Brown the beef for 4-5 minutes, seasoning with salt, pepper, garlic powder, and onion powder.
  2. Slice the onion and bell pepper while the beef cooks.
  3. Layer half of the potatoes in the slow cooker, followed by half of the cooked beef, onions, peppers, and cheese. Repeat the layers.
  4. In a bowl, mix cream of mushroom soup, sour cream, and beef broth until smooth; pour over the layered ingredients.
  5. Cover and cook on low for 6 hours or high for 3 hours until potatoes are tender.
