  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup olive oil (or beef tallow/ghee)
  • 1 whole head garlic
  • 1 tablespoon fresh rosemary
  • Flakey sea salt for finishing

Instructions

  1. Preheat your oven to 450°F (232°C) with a large roasting pan inside.
  2. Rinse potatoes under cold water, then place in a large stock pot. Cover with cold water, add kosher salt and baking soda. Boil until barely fork-tender (about 25 minutes), then drain and dry.
  3. Carefully remove the preheated roasting pan from the oven, add olive oil, and let it heat until shimmering.
  4. Rough up the edges of the dried potatoes by shaking them in the colander. Add them to the roasting pan, season with salt and pepper, and nestle in the garlic head cut-side down.
  5. Roast for about 55-60 minutes, tossing every 20 minutes until crispy and golden brown.
