  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 clove garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1 teaspoon chili crunch

  1. Wash and chop cucumbers into bite-sized pieces. If using frozen edamame, ensure they are shelled and defrosted.
  2. In a mixing bowl, whisk together olive oil, rice vinegar, tamari, sesame oil, maple syrup, minced garlic, grated ginger, and chili crunch until smooth.
  3. In a large bowl, combine chopped cucumbers and shelled edamame. Pour the dressing over the salad and toss gently to coat evenly.
