  • 2 (14 ounce) cans white beans (drained)
  • 2 (4 ounce) cans mild green chilies (with juices)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 4 ounces cream cheese (softened)
  • Salt & pepper (to taste)

  • Mexican cheese blend (optional)

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent (5-7 minutes).
  2. Add bite-sized chicken pieces; cook until no longer pink on the outside.
  3. Stir in minced garlic for about 30 seconds until fragrant.
  4. Combine chicken broth, drained white beans, green chilies (with juices), chili powder, ground cumin, and oregano; bring to a boil then simmer for 10 minutes.
  5. Microwave cream cheese until softened (about 30 seconds) and stir into the chili; cook for an additional 5 minutes.
  6. Season with salt and pepper to taste and serve hot with desired toppings.
