  • Salt and black pepper, to taste

  1. Cook the pasta: Boil salted water in a large pot, add fettuccine or spaghetti, and cook until al dente. Drain and set aside, reserving some pasta water.
  2. Prepare the chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown (about 5–7 minutes).
  3. Make the sauce: In a mixing bowl, whisk together eggs, grated Parmesan cheese, minced garlic, whole milk (or half-and-half), salt, and pepper until combined.
  4. Combine everything: Remove the skillet from heat; add drained pasta to the skillet with chicken. Pour sauce over pasta while tossing quickly to coat evenly. If needed, add reserved pasta water for desired creaminess.
