  • 1 cup fresh broccoli florets
  • 1 cup sliced mushrooms
  • Salt & pepper to taste
  • Fresh chives or parsley for garnish

Instructions

  1. Steam or boil the broccoli for 3-4 minutes until tender-crisp. Drain and set aside.
  2. In a skillet over medium heat, add a drizzle of oil and sauté the mushrooms until golden brown. Season lightly with salt and pepper.
  3. In a bowl, whisk together the eggs, milk (if using), salt, and pepper. Melt butter in a non-stick skillet over low heat, pour in the egg mixture, and cook slowly while stirring gently until creamy.
  4. Plate the scrambled eggs alongside avocado slices, sautéed mushrooms, and broccoli. Garnish with chopped herbs if desired.
