  • 2 lbs chicken, cut into thin strips
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • ½ cup pepperoncini peppers, drained

Instructions

  1. Season chicken strips with sea salt and ground pepper.
  2. Melt butter in a skillet over medium-high heat; add chicken and cook until browned on all sides. Remove from skillet.
  3. Sauté onions in the same skillet until golden; add garlic and cook an additional minute.
  4. Pour in chicken stock and roasted red peppers; reduce mixture by half.
  5. Stir in heavy cream and Parmesan cheese until smooth.
  6. Return heat to medium; add Italian seasoning and pepperoncini peppers.
  7. Add back the chicken; simmer until cooked through and sauce thickens.
