  • 300g boneless chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper
  • 1 tbsp butter
  • 1 onion, finely chopped
  • 1 red bell pepper, sliced into strips
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp sweet paprika
  • 150ml chicken broth
  • 150ml heavy cream
  • 1 tbsp tomato paste
  • 1 cup basmati rice
  • 2 cups water
  • Pinch of salt
  • Fresh parsley, chopped

Instructions

  1. Cook rice in salted water until fluffy; set aside.
  2. Season chicken with smoked paprika, salt, and pepper.
  3. In a skillet, heat olive oil and brown the chicken on all sides; remove from skillet.
  4. Sauté onion, bell pepper, and garlic in the same skillet until softened.
  5. Stir in both types of paprika and tomato paste; add chicken broth and simmer for 3-4 minutes.
  6. Pour in heavy cream, return chicken to skillet, and cook until the sauce thickens.
  7. Serve hot over rice, garnished with chopped parsley.
