  • 1 tsp turmeric
  • 1 tsp ground cumin
  • tsp cayenne (adjust for heat)
  • Salt and pepper to taste
  • 1 can (14 oz) coconut milk
  • 1 cup tomato puree
  • 1 cup chicken broth
  • Juice of lime
  • cup plain yogurt or cream (optional for extra richness)
  • Fresh cilantro, chopped for garnish
  • Fluffy basmati rice for serving

Instructions

  1. Prepare all ingredients by chopping the chicken, onion, garlic, and ginger.
  2. Heat vegetable oil in a large skillet over medium heat. Sauté onions until translucent, then add garlic and ginger, cooking until fragrant.
  3. Stir in curry powder, turmeric, cumin, cayenne pepper, salt, and pepper; cook for about 2 minutes.
  4. Add chicken pieces to the skillet; cook until lightly browned on all sides.
  5. Pour in coconut milk, tomato puree, and chicken broth; stir thoroughly and bring to a gentle simmer.
