  • 8 oz short pasta
  • 7 oz halloumi cheese, cubed
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1½ cups cherry tomatoes, halved
  • ½ cup heavy cream
  • ¼ cup reserved pasta water
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup fresh basil leaves, torn

Instructions

  1. Cook the pasta according to package instructions in salted boiling water. Reserve ¼ cup of cooking water before draining.
  2. In a skillet over medium heat, add olive oil and fry halloumi cubes until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  4. Add halved cherry tomatoes and cook until slightly softened (about 3-5 minutes).
  5. Pour in heavy cream and reserved pasta water; stir until well combined.
  6. Toss in drained pasta, coating well with the sauce.
  7. Add halloumi back to the skillet along with torn basil leaves; mix gently.
  8. Season with salt and black pepper; heat through before serving.
