Ingredients

Scale
  • 1 lbs boneless skinless chicken breasts, sliced into thick strips
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 12 oz linguine pasta
  • 2 tablespoons unsalted butter (for sauce)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear the seasoned chicken strips until golden brown and cooked through, about 6-8 minutes per side. Remove from the skillet.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add heavy cream and milk; bring to a simmer.
  4. Stir in Velveeta until melted, then add mozzarella and Parmesan cheese slowly until the sauce is smooth.
  5. Toss cooked linguine in the sauce, adjusting thickness with reserved pasta water if needed, then serve with chicken on top.
