  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 tbsp brown sugar
  • 1 can (13.5 oz) full-fat coconut milk

Instructions

  1. Prepare your ingredients: chop the onion, mince the garlic, and grate the ginger.
  2. In a large pot over medium heat, add oil and brown the beef cubes in batches for about 5-7 minutes.
  3. Remove the beef and sauté onions until translucent (about 5 minutes), then add garlic and ginger for an additional minute.
  4. Stir in red curry paste, turmeric, paprika, coriander, and brown sugar; cook for about 2 minutes until fragrant.
