  • 2 lbs beef chuck, cut into cubes
  • 1 tbsp oil, vegetable or coconut
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground cumin
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. Prepare all ingredients: chop onion, mince garlic, grate ginger, and cube beef if necessary.
  2. In a Dutch oven, heat oil over medium heat. Sauté onion until translucent, then add garlic and ginger for one minute.
  3. Stir in red curry paste, cumin, and chili flakes; cook for about two minutes.
  4. Add beef cubes, coconut milk, and beef broth. Season with salt and pepper; mix well.
  5. Bring to a boil, reduce heat to low, cover, and simmer for 2-3 hours until beef is tender.
  6. Just before serving, squeeze lime juice over the curry.
