  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent; add minced garlic and grated ginger.
  2. Stir in curry powder, ground cumin, turmeric, and cayenne pepper; cook for 2 minutes.
  3. Add cubed beef; coat with spices. Pour in beef broth, coconut milk, and tomato paste; season with salt and pepper.
  4. Bring to a boil then reduce heat; simmer uncovered for about 40 minutes until beef is tender.
  5. Stir in chickpeas; cook for an additional 10 minutes.
  6. For naan dough, mix flour, yogurt, warm water, sugar, and baking powder until soft dough forms; knead until smooth.
  7. Roll into circles and cook on a hot skillet until bubbles form; flip to brown both sides.
