  • 1.5 lbs beef chuck, cut into bite-sized cubes
  • 1 tbsp coconut oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder, adjust to taste
  • 1 tsp garam masala
  • 1 (14 oz) can chickpeas, drained and rinsed
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can full-fat coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • 2 cups all-purpose flour for naan
  • 2 tsp baking powder for naan
  • 1/2 tsp salt for naan
  • 3/4 cup plain yogurt for naan

Instructions

  1. Start by heating the coconut oil in a large pot over medium heat. Add the diced onion and sauté until translucent.
  2. Stir in minced garlic, grated ginger, ground cumin, ground coriander, turmeric, smoked paprika, chili powder, and garam masala. Cook for about 2 minutes until fragrant.
  3. Add the beef chuck to the pot. Sear on all sides until browned.
  4. Pour in the diced tomatoes and chickpeas. Stir well to combine.
  5. Pour in the full-fat coconut milk. Bring to a gentle simmer. Season with salt and pepper to taste. Let it cook on low heat for about 45 minutes or until the beef is tender.
  6. In a mixing bowl, combine all-purpose flour, baking powder, salt, and yogurt. Mix until it forms a soft dough.
  7. Divide dough into equal portions. Roll each piece into flat rounds using a rolling pin.
  8. Heat a skillet over medium-high heat. Cook each naan for about 2-3 minutes on each side until golden brown.
  9. Garnish the curry with chopped cilantro and lime juice before serving alongside warm garlic naan.
