  • 1/2 red bell pepper
  • 1/2 yellow onion
  • 1 tbsp olive oil
  • 1/2 tsp crushed red pepper
  • 1.5 cups medium shells (dried pasta)
  • 8 oz fresh chicken sausage
  • 2 cloves garlic (minced)
  • 1/2 cup half & half
  • 4 cups fresh baby spinach
  • 1/3 cup finely grated Parmesan cheese
  • Juice of 2 wedges fresh lemon

Instructions

  1. Start by quartering the cherry tomatoes and finely chopping the red bell pepper and yellow onion.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped vegetables along with salt and crushed red pepper; sauté for about 7-8 minutes until softened.
  3. In a separate pot, boil salted water and cook the medium shells until al dente.
  4. Add the chicken sausage and minced garlic to the skillet, breaking up the sausage as it cooks for about 5-6 minutes.
  5. Stir in half & half, then add the baby spinach until wilted.
  6. Transfer cooked pasta into the skillet using a slotted spoon, adding reserved pasta water as needed for creaminess.
  7. Mix in grated Parmesan cheese and adjust seasoning with salt, pepper, and freshly squeezed lemon juice before serving.
