  • 1 tablespoon olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley or dill, chopped

Instructions

  1. In a mixing bowl, combine olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss the cubed chicken until well coated.
  2. Heat a skillet over medium heat and cook the chicken for about 6–8 minutes until golden brown and fully cooked. Remove from heat.
  3. In another bowl, mix together feta cheese, Greek yogurt, lemon juice, minced garlic, salt, and pepper until smooth.
  4. Assemble the bowls by starting with rice or quinoa as the base. Top with cooked chicken and fresh veggies. Drizzle generously with feta sauce.
