Ingredients

  • Orzo pasta
  • Boneless chicken breast, cubed
  • Fresh broccoli florets
  • Garlic (minced)
  • Onion (finely chopped)
  • Cream or half-and-half
  • Grated Parmesan cheese
  • Olive oil
  • Butter
  • Fresh parsley
  • Salt
  • Black pepper
  • Garlic powder
  • Paprika

Instructions

  1. Cook the orzo in salted boiling water until al dente. Add broccoli during the last few minutes of cooking. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with garlic powder, paprika, salt, and pepper; cook until golden brown (about 6-8 minutes). Remove and set aside.
  3. In the same skillet, melt butter and sauté onion and garlic until fragrant. Stir in cream (or half-and-half) and add grated Parmesan until melted.
  4. Combine cooked orzo and broccoli with the sauce in the skillet; gently fold in cooked chicken.
  5. Serve garnished with fresh parsley and additional Parmesan if desired.
