  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tbsp butter (for searing)
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 4 cloves garlic, finely minced
  • 2 tbsp butter (for sauce)
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil rotini pasta in salted water until al dente (10-11 minutes), then drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season the chicken with Cajun seasoning and cook until golden brown (6-8 minutes). Remove from pan.
  3. In the same skillet, melt butter and sauté garlic before adding heavy cream, milk, cream cheese, and Velveeta. Stir until smooth and creamy.
  4. Add cooked rotini to the sauce and toss to coat evenly. Adjust thickness with reserved pasta water if needed.
  5. Serve hot with the seared chicken on top and garnish with parsley.
