  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1 1/2 cups cracker crumbs (Ritz and/or Keebler Club)
  • 1/4 cup melted butter

Instructions

  1. Thaw the broccoli florets in the microwave for about 5 minutes, then drain well and cut into smaller pieces if necessary.
  2. In a mixing bowl, combine thawed broccoli with 1/2 cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt. Mix until well blended.
  3. Spoon the mixture into a greased baking dish (8×8-inch or 9×9-inch) and top with the remaining cheese.
  4. In another bowl, mix cracker crumbs with melted butter until evenly moistened. Sprinkle over the casserole.
  5. Bake in a preheated oven at 350°F for about 45 to 50 minutes until bubbly and golden brown on top.
